Yam can be cooked in various forms either through boiling,
porridge or pounded. The flour aspect has not been widely used. Cassava,
corn, guinea corn have been used for donkey years for making flour. The market
is not saturated with yam flour so you can give it a try. Plantain just like
yam can be prepared in various ways. Boiled
and eaten with beans or vegetable or cooked as porridge. Plantain flour is highly recommended for diabetic patients because of its low sugar profile. The demand for yam
flour is high outside Nigeria.
Yam Flour
- Use kitchen knife to Peel the bark of the yams. Slice the yams to a thin diameter. If you are making it in large quantity, you will need a slicing machine but if it is for household purpose then kitchen knife can be used to slice the yams.
- Wash the slices of yam with water.
- Turn all the slices of yam into a pot and add water
- Place on fire until is it starts boiling
- After boiling, strain the water out and spread the boiled slices of yam on a tray and place outside to dry alternatively use a dryer.
- Once they are dried, take them to a grinder and grind it to powder. You can also use mortar and pestle to pound if it is not much or if you have the time.
- After grinding, use filter to filter out the chaff
- The filtrate is your yam flour. You can also combine this flour with other flours like corn or cassava flour.
- If you want to use it to eat soup, simply heat water in a small pot
- When it starts boiling gradually add the flour to the boiling water with one hand and stir continuously with your kitchen spatula with the other hand until it is hard. You can also tell someone within to help you pour the flour into the boiling water while you do the stirring.
Plantain Flour
- Peel off the bark of the plantain (unripe plantain) and slice them into thin slices. Wash the slices of plantain with water to remove dirt.
- Spread the sliced plantain on a tray and keep outside under the sun to dry. Alternatively use a dryer to dry it.
- Once they are dried, take them to a grinder and grind it to powder. You can also use mortar and pestle to pound, if it is not much or if you have the time.
- After grinding, use filter to filter out the chaff
- The filtrate is your plantain flour.
